An introduction to some of our Ramen Favourites

Japanese Ramen

  • Shoyu

    Shoyu Ramen

    Shoyu is a Japanese word for soy sauce. Although this noodle is soy sauce based it’s not going to be very salty since it’s diluted with dashi and chicken/pork broth. It has a light soy sauce umami flavour and it is perfect for a quick lunch with ramen egg and bamboo shoots.

  • Tonkotsu

    Tonkotsu Ramen

    Japanese Tonkotsu is made exclusively with pork bones. It is essentially pork bone broth that’s rich, silky and creamy. Try this with pork chashu, corn and seaweed.

  • Spicy Ramen

    Spicy Ramen

    Japanese spicy ramen are typically less spicy compared to Korean ones. They are usually spiced with Japanese Chilies that is fragrant and mildly spicy. This is great with our dumplings, fried egg and pickles.

Korean Ramen

  • Shin Ramen

    Shin Ramen

    The classic Korean ramen must be the Nongshim original Shin Ramyun. This usually serves as our hangover cure with bacon and fried egg because it is quite spicy. It also has a great umami note from shiitake mushrooms.

  • Samyang Ramen

    Samyang Ramen

    Samyang is also a very classic Ramen brand in Korea. This soup is slightly different than Shin with a little ham flakes. Try it with some pan fried Spam and kimchi!

  • Ohsung Hong

    Ohsung Hong Ramen

    Available in Spicy (Red bag) and Mild (Orange bag). This is relatively similar to the Shin and Samyang Ramen. Korean ramen soup base typically contain anchovies, meat and shiitake mushroom. Try it with our dumplings!

  • Paldo Gomtang Ramen

    Paldo Gomtang Ramen

    Gomtang is a flavourful Korean beef bone broth made with oxtail and shank bones. It is rich and creamy, perfect with seared pork belly and vegetables.

Chinese Ramen

  • JML Pork

    JML Pork and Scallion Ramen

    JML - Jin Mai Lang is an instant foods company from Hebei China. This is a savoury noodle with scallions and roast pork spare ribs. Chinese ramen noodles are thinner than Korean ones so it takes less time to cook. Try it with our dumplings!

  • JML Beef and Pickle Ramen

    We love this noodle for the bag of pickles that comes in a bag. This is a classic noodle from Taiwan. Beef flavoured soup with sour pickles gives you a savoury/ sour sensation. Make this better by boiling a few pieces of thinly sliced beef just before the noodles are ready!

  • Nissin Sesame Oil Ramen

    Made in Hong Kong! Fiona practically grew up with this. Delicious and dependable. These noodles are perfect cooking just al dente to retain some chewiness. Perfect for Hong Kong Cafe style Beef Satay Noodles!

  • Nissin Tonkotsu Ramen

    Nissin Tonkotsu Ramen

    This is a little different than the Japanese Tonkotsu ramen above. They both have a rich pork soup base but this one has a small amount of sesame for some added nutty flavour. I feel like you need ramen eggs for this one.

  • Nissin Black Garlic Oil Tonkotsu Ramen

    This is Fiona’s absolute favourite! The holy grail of ramen out there, which combines the richness of the Tonkotsu ramen with a delicious drizzle of black garlic oil. Enjoy it plain or with a wide variety of easy-made ramen toppings.
